Ingredients

  • 200 grams crushed chocolate cookies
  • 100 grams unsalted butter, melted
  • 250 grams dark chocolate chips
  • 200 ml whipping cream
  • 2 tablespoons powdered sugar
  • 200 grams cream cheese, softened
  • 1 teaspoon vanilla extract
  • 50 grams dark chocolate bar, grated (for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a medium bowl, combine the crushed chocolate cookies and melted butter. Mix well until the mixture resembles wet sand.

Step 3

Press the cookie mixture into the bottom of a lined 9x9 inch (23x23 cm) square baking pan to form an even layer. Bake in the preheated oven for 10 minutes, then set aside to cool completely.

Step 4

In a microwave-safe bowl, combine the dark chocolate chips and 100 ml of the whipping cream. Microwave in 20-second bursts, stirring after each, until the chocolate is completely melted and smooth. Set aside to cool slightly.

Step 5

In a separate large bowl, beat the cream cheese and powdered sugar together using a hand mixer until smooth and creamy.

Add the remaining 100 ml of whipping cream and vanilla extract to the cream cheese mixture. Continue to beat until the mixture becomes light and fluffy.

Spread half of the cream mixture evenly over the cooled cookie crust. Smooth it out with a spatula.

Pour the melted dark chocolate mixture over the cream layer and spread it evenly.

Top with the remaining cream mixture, carefully spreading it over the chocolate layer without mixing the layers.

Refrigerate the bars for at least 4 hours, or until fully set.

Once set, garnish with grated dark chocolate. Cut into 12 equal bars and serve chilled.
