Ingredients

  • 1.5 cups All-purpose flour
  • 0.75 cup Unsweetened cocoa powder
  • 1.5 cups Granulated sugar
  • 1.5 teaspoons Baking soda
  • 0.5 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 cup Buttermilk
  • 1 cup Hot coffee
  • 0.5 cup Vegetable oil
  • 2 pieces Large eggs
  • 1.5 teaspoons Almond extract
  • 8 ounces Cream cheese, softened
  • 0.5 cup Unsalted butter, softened
  • 3 cups Powdered sugar
  • 0.25 cup Unsweetened cocoa powder (for frosting)
  • 1 teaspoon Almond extract (for frosting)
  • 3 ounces Dark chocolate, melted and cooled
  • 0.5 cup Whole almonds (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, lining the bottoms with parchment paper for easy removal.

Step 2

In a large mixing bowl, sift together the all-purpose flour, cocoa powder, granulated sugar, baking soda, baking powder, and salt.

Step 3

In another bowl, whisk together the buttermilk, hot coffee, vegetable oil, eggs, and almond extract until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients, mixing until fully combined. Avoid overmixing to maintain a tender cake texture.

Step 5

Pour the batter evenly into the prepared cake pans. Tap the pans lightly on the counter to release air bubbles.

Step 6

Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 7

Once baked, allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Step 8

To make the frosting: In a large bowl, beat the cream cheese and unsalted butter together until smooth and fluffy.

Step 9

Add the powdered sugar, cocoa powder, almond extract, and melted dark chocolate. Beat until the frosting is creamy and well combined.

Step 10

Once the cakes are completely cool, level their tops with a serrated knife if needed. Place one layer on a serving plate or cake stand.

Step 11

Spread a thick, even layer of frosting on top of the first cake layer. Place the second layer on top, then spread frosting over the top and sides of the entire cake.

Step 12

Garnish with whole almonds around the edges or on top, if desired.

Step 13

Refrigerate the cake for at least 30 minutes before slicing to help the frosting set. Serve and enjoy!
