Ingredients

  • 100 grams hazelnuts
  • 50 grams almonds
  • 3 tablespoons sesame seeds
  • 2 tablespoons coriander seeds
  • 2 tablespoons cumin seeds
  • 1 tablespoon fennel seeds
  • 1 teaspoon black peppercorns
  • 1 teaspoon flaked sea salt
  • 1 teaspoon paprika

Directions

Step 1

Preheat a dry skillet over medium heat.

Step 2

Toast the hazelnuts and almonds in the skillet for 4-5 minutes, stirring often, until they are lightly golden and fragrant. Remove from the skillet and set aside to cool slightly.

Step 3

In the same skillet, toast the coriander seeds, cumin seeds, fennel seeds, and black peppercorns for 2-3 minutes, or until they are fragrant. Be careful not to let them burn.

Step 4

Toast the sesame seeds in the skillet for 1-2 minutes until golden. Remove and let cool.

Step 5

Once the nuts have cooled, rub the hazelnuts between your hands or a clean kitchen towel to remove most of their skins. Some leftover skin is fine.

Step 6

Place the toasted nuts into a food processor and pulse a few times to create a coarse crumb. Be careful not to overblend; you want texture, not nut butter.

Step 7

Add the toasted spices, sesame seeds, flaked sea salt, and paprika to the food processor. Pulse just enough to mix everything together while keeping the texture coarse.

Step 8

Taste and adjust seasoning with more salt or paprika if desired.

Store the dukkah in an airtight container for up to 2 weeks. Serve with crusty bread and olive oil for dipping, or sprinkle over your favorite dishes.
