Ingredients

  • 150 grams Unsalted butter
  • 200 grams All-purpose flour
  • 50 grams Powdered sugar
  • 2 teaspoons Earl Grey tea leaves
  • 200 grams Granulated sugar
  • 3 whole Fresh lemons (zested and juiced)
  • 4 large Eggs
  • 2 tablespoons Cornstarch
  • 1 pinch Salt
  • 2 tablespoons Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a square 20x20 cm (8x8 inch) baking pan with parchment paper, leaving an overhang on two sides for easy removal.

Step 2

In a food processor, combine the butter, flour, powdered sugar, and Earl Grey tea leaves. Pulse until the mixture forms a crumbly dough.

Step 3

Press the dough evenly into the prepared baking pan to form a firm base. Use a spatula or the bottom of a glass to ensure it is packed tightly.

Step 4

Bake the crust in the preheated oven for 15 minutes, or until lightly golden. Remove from the oven and let it cool slightly.

Step 5

While the crust is cooling, prepare the lemon filling. In a medium bowl, whisk together the granulated sugar, lemon zest, lemon juice, eggs, cornstarch, and salt until smooth.

Step 6

Pour the lemon mixture over the warm crust, spreading it out evenly.

Step 7

Return the pan to the oven and bake for 22-25 minutes, or until the filling is set and no longer jiggles in the center.

Step 8

Remove the pan from the oven and let the lemon tea squares cool completely at room temperature, then refrigerate for at least 1 hour to set fully.

Step 9

Once chilled, lift the lemon squares out of the baking pan using the parchment overhang. Slice into 16 squares with a sharp knife.

Step 10

Dust the tops of the squares with powdered sugar before serving.
