  • 28 ounces canned diced tomatoes, with juices
  • 2 cups vegetable broth
  • 15 ounces canned black beans, drained and rinsed
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned corn, drained
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh cilantro, chopped (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, green bell pepper, red bell pepper, and carrots to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
