Ingredients

  • 1 pound Fresh green beans, trimmed
  • 4 sprigs Fresh dill sprigs
  • 3 cloves Garlic cloves, peeled
  • 0.5 teaspoon Red pepper flakes
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Black peppercorns
  • 1.5 cups White vinegar
  • 1 cup Water
  • 1.5 tablespoons Kosher salt
  • 1 tablespoon Granulated sugar

Directions

Step 1

Start by cleaning and trimming the green beans so they are uniform in size. Set aside.

Step 2

Sterilize a quart-sized glass jar with a lid by boiling it in water for 10 minutes. Let dry on a clean towel.

Step 3

In the sterilized jar, layer the trimmed green beans upright. Add the fresh dill sprigs, garlic cloves, red pepper flakes, mustard seeds, and black peppercorns, distributing them evenly among the beans.

Step 4

In a medium saucepan, combine the white vinegar, water, kosher salt, and sugar. Bring the mixture to a boil, stirring until the salt and sugar dissolve completely.

Step 5

Once boiling, carefully pour the hot brine over the green beans in the jar, ensuring all the beans are fully submerged and there is about 1/2 inch of space at the top of the jar.

Step 6

Tap the jar gently on the counter to release air bubbles, then seal it tightly with its lid.

Step 7

Allow the jar to cool to room temperature before transferring it to the refrigerator.

Step 8

Let the pickled beans marinate in the refrigerator for at least 24 hours for the best flavor. The beans will keep for up to 2 weeks when stored properly in the fridge.
