  • 1 pound Ground turkey (lean)
  • 1 medium Yellow onion (diced)
  • 3 cloves Garlic (minced)
  • 1 large Red bell pepper (diced)
  • 1 cup Pumpkin purée
  • 14.5 ounces Canned diced tomatoes (with juices)
  • 1 can Black beans (drained and rinsed)
  • 2 cups Chicken broth
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh cilantro (chopped, for garnish)
  • 0.5 cup Sour cream (optional, for serving)
  • 0.5 cup Shredded cheddar cheese (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the ground turkey and cook until browned, breaking it up with a spoon. This should take about 5-7 minutes. Remove the turkey from the pot and set aside.

Step 3

In the same pot, add the diced onion and cook for 3-4 minutes until softened.

Step 4

Stir in the minced garlic and diced red bell pepper, cooking for another 2-3 minutes until fragrant.

Step 5

Add the pumpkin purée, canned diced tomatoes, black beans, and chicken broth to the pot. Stir to combine.

Step 6

Return the cooked turkey to the pot and mix well.

Step 7

Stir in the chili powder, ground cumin, paprika, ground cinnamon, cayenne pepper, salt, and black pepper.

Step 8

Bring the mixture to a gentle boil, then reduce the heat to low and simmer uncovered for 25-30 minutes, stirring occasionally to prevent sticking.

Step 9

Taste and adjust seasoning if needed. Add more salt or cayenne pepper for stronger flavor.

Step 10

Ladle the chili into bowls and top with chopped fresh cilantro. Add optional toppings like sour cream and shredded cheddar cheese if desired.

Step 11

Serve warm and enjoy!
