Ingredients

  • 1 head Cauliflower
  • 2 cups Water
  • 1.5 cups White vinegar
  • 3 tablespoons Sugar
  • 1.5 tablespoons Salt
  • 4 cloves Garlic cloves
  • 2 teaspoons Black peppercorns
  • 1 teaspoon Red chili flakes
  • 2 leaves Bay leaves
  • 1 teaspoon Mustard seeds
  • 4 sprigs Fresh dill

Directions

Step 1

Cut the cauliflower into bite-sized florets and rinse thoroughly under cold water. Set aside.

Step 2

In a medium saucepan, combine water, white vinegar, sugar, and salt. Bring the mixture to a boil over medium heat, stirring to dissolve the sugar and salt completely.

Step 3

Peel the garlic cloves and lightly crush them with the flat side of a knife.

Step 4

Add the peppercorns, chili flakes, bay leaves, mustard seeds, and crushed garlic cloves to the boiling brine. Simmer for 2-3 minutes to infuse the flavors.

Step 5

Remove the saucepan from heat and let the brine cool for about 5 minutes.

Step 6

Place the cauliflower florets into clean, sterilized mason jars, packing them tightly but leaving about 1 inch of headspace.

Step 7

Add 1-2 sprigs of fresh dill into each jar for added flavor.

Step 8

Carefully pour the warm brine over the cauliflower in each jar, making sure the florets are fully submerged. Leave about 1/2 inch of headspace at the top.

Step 9

Seal the jars tightly with lids and allow them to cool to room temperature before refrigerating.

Step 10

Refrigerate the pickled cauliflower for at least 24 hours before serving. For the best flavor, allow it to pickle for at least 3-5 days.
