Ingredients

  • 2 cups All-purpose flour
  • 1/3 cup Granulated sugar
  • 2.5 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 0.5 cup Unsalted butter, cold and cubed
  • 1 cup Mixed fresh berries (blueberries, raspberries, strawberries diced)
  • 0.5 cup Dannon plain yogurt
  • 1 Large egg
  • 1.5 teaspoons Vanilla extract
  • 2 tablespoons Heavy cream (for brushing)
  • 2 tablespoons Coarse sugar (for sprinkling)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, cut the butter into the flour mixture until it forms pea-sized crumbs.

Step 4

Gently fold in the mixed summer berries, being careful not to crush them.

Step 5

In a separate bowl, whisk together the yogurt, egg, and vanilla extract until smooth and well combined.

Step 6

Pour the wet ingredients into the dry ingredients, and gently stir until the dough just starts to come together. Avoid overmixing.

Step 7

Turn the dough out onto a lightly floured surface and gently press it into a round disk about 1-inch thick. Cut the disk into 8 equal wedges.

Step 8

Transfer the wedges to the prepared baking sheet, spacing them a couple of inches apart.

Step 9

Brush the tops of the scones with the heavy cream and sprinkle with coarse sugar for a crunchy, golden finish.

Step 10

Bake in the preheated oven for 18-20 minutes, or until the scones are golden brown on top.

Step 11

Remove from the oven and let cool slightly on the baking sheet before serving warm or at room temperature.
