  • 0.5 teaspoon Vanilla extract (for icing)
  • 0.25 cup Sliced almonds (optional topping)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

For the crust, combine 1 cup flour, 1/2 cup butter, and 2 tablespoons water in a bowl. Mix with a fork until the dough comes together. Divide the dough into two equal portions and pat each portion into a 12x3-inch rectangle on the prepared baking sheet.

Step 3

For the choux pastry topping, heat 1/2 cup butter and 1 cup water in a medium saucepan over medium heat until the mixture boils. Reduce the heat to low and add 1 cup flour all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan.

Step 4

Remove from heat and allow the mixture to cool for 5 minutes. Beat in the eggs one at a time, mixing well after each addition. Stir in 1 teaspoon vanilla extract.

Spread the choux pastry evenly over the two crusts, covering them completely. Smooth the tops with a spatula.

For the icing, whisk together 1 cup powdered sugar, 2 tablespoons milk, and 1/2 teaspoon vanilla extract until smooth. Drizzle over the cooled puffs.
