Ingredients

  • 300 g Dried yellow peas
  • 500 g Smoked pork belly or ham hock
  • 1.5 liters Water
  • 2 medium Carrots
  • 1 medium Leek
  • 1 medium Onion
  • 1 Bay leaf
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley

Directions

Step 1

Rinse the dried yellow peas thoroughly under cold water and soak them in a large bowl of water for at least 6 hours or overnight.

Step 2

Drain the soaked peas and set them aside.

Step 3

In a large pot, add the smoked pork belly or ham hock and 1.5 liters of water. Bring to a gentle boil and skim off any foam that forms on the surface.

Step 4

Add the drained yellow peas to the pot along with the bay leaf. Lower the heat to a simmer and let cook for about 90 minutes, stirring occasionally.

Step 5

Meanwhile, peel the carrots and dice them into small cubes. Slice the leek into thin rounds and rinse thoroughly. Dice the onion finely.

Step 6

Add the diced carrots, leek, and onion to the pot. Stir well and continue to simmer for another 60 minutes, or until the peas have broken down and the soup has thickened to your preferred consistency. Stir occasionally to prevent sticking.

Step 7

Remove the smoked pork from the pot, shred or chop it into bite-sized pieces, and return it to the soup.

Step 8

Season the soup with salt and black pepper, adjusting to taste.
