Ingredients

  • 150 grams All-purpose flour
  • 120 grams Sugar
  • 3 large Eggs
  • 50 grams Unsalted butter
  • 60 milliliters Whole milk
  • 1 teaspoon Vanilla extract
  • 200 grams Powdered sugar
  • 150 grams Softened unsalted butter (for buttercream)
  • 2 tablespoons Heavy cream
  • 150 grams Dark chocolate
  • 1 teaspoon Vegetable oil

Directions

Step 1

Preheat your oven to 170°C (340°F) and line a 9 x 9-inch square baking dish with parchment paper.

Step 2

In a medium mixing bowl, whisk together the eggs and sugar until light, fluffy, and doubled in volume (about 5 minutes).

Step 3

Gently sift in the flour and fold it into the egg mixture using a spatula. Be careful not to overmix or deflate the batter.

Step 4

Melt the butter and combine it with the milk. Slowly pour this mixture into the batter along with the vanilla extract, folding gently until incorporated.

Step 5

Pour the batter into the prepared baking dish and smooth the top with a spatula. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Step 6

Allow the cake to cool completely on a wire rack, then slice it into 1.5-inch cubes.

Step 7

To prepare the buttercream, beat the softened butter with powdered sugar until smooth and creamy. Add the heavy cream and beat again until fluffy.

Step 8

Using a small spatula or piping bag, sandwich the cake cubes with a layer of buttercream in the middle. Smooth the sides if necessary and place them in the fridge to firm up for 30 minutes.

Step 9

For the chocolate coating, melt the dark chocolate and stir in the vegetable oil for smoothness.

Step 10

Dip each chilled cake mignon into the melted chocolate, ensuring it's fully coated. Place on a wire rack or parchment-lined tray to set.

Step 11

Once the chocolate has hardened, serve fresh or store in an airtight container in the fridge for up to 3 days.
