  • 3 medium Carrots, sliced
  • 2 medium Celery stalks, sliced
  • 3 Garlic cloves, minced
  • 500 milliliters Pilsner beer
  • 500 milliliters Beef stock
  • 2 tablespoons Tomato paste
  • 2 Bay leaves
  • 4 sprigs Fresh thyme
  • 4 medium Potatoes, peeled and cubed
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Pat the beef chunks dry with a paper towel, then season them with salt and pepper. Lightly dust the beef with flour, shaking off any excess.

In a large pot or Dutch oven, heat the butter and olive oil over medium-high heat. Sear the beef in batches until well-browned on all sides. Remove the beef and set aside.
