Preheat your oven to 375°F (190°C).
Season the pork loin generously on all sides with salt and black pepper.
In a large oven-safe skillet, heat the butter and olive oil over medium-high heat. Once hot, sear the pork loin on all sides until golden brown, about 2-3 minutes per side. Remove the pork from the skillet and set it aside.
In the same skillet, add the sliced onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
Add the sliced apples, ground cinnamon, and ground allspice to the skillet. Stir to coat the apples and cook for 3-4 minutes until the apples begin to soften.
