  • 3 medium apples (firm and tart, such as Granny Smith, peeled, cored, and sliced)
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground allspice
  • 1 cup chicken stock
  • 0.5 cup heavy cream
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Season the pork loin generously on all sides with salt and black pepper.

In a large oven-safe skillet, heat the butter and olive oil over medium-high heat. Once hot, sear the pork loin on all sides until golden brown, about 2-3 minutes per side. Remove the pork from the skillet and set it aside.
