Ingredients

  • 6 large Russet potatoes
  • 6 tablespoons Unsalted butter
  • 0.75 cups Whole milk
  • 2 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 1 tablespoon Olive oil
  • 1 medium, diced Yellow onion
  • 2 medium, diced Carrots
  • 3 cloves, minced Fresh garlic
  • 1.5 pounds Ground beef
  • 1 cup Frozen peas
  • 2 tablespoons Tomato paste
  • 0.75 cups Beef broth
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoons Fresh thyme leaves
  • 0.5 teaspoons Fresh rosemary leaves

Directions

Step 1

Peel and dice the potatoes into roughly equal-sized chunks. Place them in a large pot of salted water, bring to a boil, and cook until tender, about 15-20 minutes.

Step 2

Drain the potatoes and return them to the pot. Add butter, milk, 1 teaspoon of salt, and 0.5 teaspoon of black pepper. Mash until smooth and set aside.

Step 3

Preheat your oven to 400°F (200°C).

Step 4

In a large skillet, heat olive oil over medium heat. Add the diced onion and carrots. Cook for 5-7 minutes, stirring occasionally, until softened.

Step 5

Add minced garlic to the skillet and cook for 1 minute until fragrant.

Step 6

Add the ground beef, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 8-10 minutes. Drain excess fat if necessary.

Step 7

Stir in tomato paste, beef broth, Worcestershire sauce, thyme, rosemary, and the remaining salt and black pepper. Cook for an additional 5 minutes, allowing the flavors to meld and the liquid to reduce slightly.

Step 8

Add the frozen peas and stir to combine. Let cook for 2 more minutes.

Step 9

Transfer the meat and vegetable mixture into an even layer in a 9x13-inch baking dish.

Step 10

Spread the mashed potatoes evenly on top of the meat mixture, smoothing the surface with a spatula. Use a fork to create decorative ridges if you'd like a golden, textured top.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the top is lightly golden and the filling is bubbling around the edges.

Step 12

Remove from the oven and let rest for 5 minutes before serving. Enjoy your comforting Danielle's Shepherd's Pie!
