  • 150 grams pancetta (diced)
  • 400 grams canned whole peeled tomatoes

  • 2 cloves garlic cloves (minced)
  • 1 teaspoon red chili flakes
  • 2 tablespoons extra-virgin olive oil
  • 50 grams pecorino romano cheese (grated)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente, then reserve 1 cup of pasta water and drain the rest.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the diced pancetta and cook for 5-7 minutes, stirring occasionally, until it becomes crispy.

Step 3

Remove the pancetta from the skillet with a slotted spoon and set aside. Leave the rendered fat in the skillet.
