Ingredients

  • 4 lbs Chicken pieces (legs, thighs, wings, or breasts)
  • 3 cups Buttermilk
  • 2 tbsp Hot sauce
  • 3 cups All-purpose flour
  • 1 cup Cornstarch
  • 1 tbsp Salt
  • 2 tsp Black pepper
  • 1 tsp Cayenne pepper
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 2 Eggs
  • 4 cups Vegetable oil (for frying)

Directions

Step 1

Rinse and pat dry the chicken pieces. Set aside.

Step 2

In a large bowl, whisk together the buttermilk and hot sauce. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, or overnight for best results.

Step 3

In a shallow bowl or dish, combine the flour, cornstarch, salt, black pepper, cayenne pepper, smoked paprika, garlic powder, and onion powder.

Step 4

In a separate bowl, lightly beat the eggs.

Step 5

Remove the chicken from the buttermilk mixture, allowing excess liquid to drip off. Dip each piece in the flour mixture, then into the beaten eggs, and back into the flour mixture. Press gently to ensure the coating adheres well.

Step 6

Heat the vegetable oil in a large, deep skillet or Dutch oven to 350°F (175°C). Use a kitchen thermometer to maintain the temperature.

Step 7

Carefully place 3-4 pieces of chicken into the hot oil without overcrowding the pan. Fry for 12-15 minutes, turning occasionally, until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).

Step 8

Remove the fried chicken from the oil and place it on a wire rack over a baking sheet to drain excess oil. Repeat with the remaining chicken.

Step 9

Let the chicken rest for 5 minutes before serving. Enjoy with your favorite side dishes!
