Ingredients

  • 4 large Russet potatoes
  • 4 tablespoons Butter
  • 0.5 cup Sour cream
  • 0.25 cup Milk
  • 1 cup Cheddar cheese
  • 4 slices Cooked bacon, crumbled
  • 3 stalks Green onions, chopped
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 teaspoons Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and scrub the russet potatoes thoroughly. Dry them with a paper towel.

Step 3

Pierce each potato several times with a fork, then rub them with olive oil and sprinkle lightly with salt.

Step 4

Place the potatoes directly on the oven rack or on a baking sheet. Bake for 50-60 minutes, until the skins are crispy and a fork easily pierces through the potatoes.

Step 5

Remove the potatoes from the oven and allow them to cool slightly, about 10 minutes, until they are safe to handle.

Step 6

Carefully slice each potato in half lengthwise. Using a spoon, scoop out the flesh into a large mixing bowl, leaving about 1/4 inch of potato on the skin to maintain structure.

Step 7

Mash the potato flesh in the mixing bowl with a potato masher or fork.

Step 8

Add butter, sour cream, milk, half of the cheddar cheese, garlic powder, salt, and pepper to the mashed potatoes. Mix until creamy and well combined.

Step 9

Fold in the crumbled bacon and half of the chopped green onions.

Step 10

Spoon the mashed potato mixture back into the potato skins, mounding it on top.

Step 11

Sprinkle the tops with the remaining cheddar cheese.

Step 12

Place the stuffed potatoes on a baking sheet and return them to the oven. Bake at 400°F (200°C) for 15 minutes, until the cheese is melted and slightly golden.

Step 13

Remove from the oven and garnish with the remaining green onions. Serve hot and enjoy!
