Ingredients

  • 12 oz spaghetti (or pasta of choice)
  • 4 cups dandelion greens
  • 3 tablespoons extra virgin olive oil
  • 4 pieces garlic cloves, minced
  • 0.5 teaspoons red pepper flakes
  • 1 unit lemon, zested and juiced
  • 0.5 cups Parmesan cheese, grated
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.5 cups pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water before draining.

Step 2

While the pasta cooks, wash the dandelion greens thoroughly to remove any dirt or grit. Trim off any tough stems and roughly chop the greens.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, cooking for about 1-2 minutes or until the garlic is fragrant but not browned.

Add the dandelion greens to the skillet and sauté for 3-4 minutes, until wilted and tender. Season with a pinch of salt and black pepper.

Add the cooked spaghetti to the skillet along with the reserved pasta cooking water. Toss everything together until the pasta is well coated and the greens are evenly distributed.
