  • 500 ml Water
  • 400 grams Granulated sugar
  • 1 medium Lemon

Directions

Step 1

Carefully pick 100 grams of fresh dandelion flowers, avoiding any areas that may have been sprayed with pesticides or chemicals.

Step 2

Rinse the dandelion flowers thoroughly under cold water to remove any dirt, bugs, or debris. Pat them dry using a clean kitchen towel or paper towels.

Step 3

Separate the yellow petals from the green parts of the flowers to avoid bitterness. This step is optional but highly recommended for a sweeter flavor.

Step 4

Zest the lemon and then cut it in half. Set aside the zest and juice for later use.

In a medium-sized saucepan, combine the dandelion petals with 500 ml of water. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 30 minutes.

Remove the saucepan from the heat and allow the mixture to cool completely. Once cool, strain the liquid through a fine mesh sieve or cheesecloth into a clean bowl, discarding the petals.

Pour the strained liquid back into the saucepan and add 400 grams of granulated sugar, the lemon zest, and the juice of the lemon. Stir well to combine.
