Ingredients

  • 4 cups Dandelion greens or arugula
  • 1 large Avocado
  • 1 cup Cherry tomatoes
  • 0.25 cup Red onion
  • 2 tablespoons Lemon juice
  • 3 tablespoons Olive oil
  • 1 teaspoon Honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Sunflower seeds or pumpkin seeds

Directions

Step 1

Wash and dry the dandelion greens or arugula thoroughly. Pat them dry with a clean kitchen towel or use a salad spinner.

Step 2

Slice the avocado in half, remove the pit, and scoop the flesh out with a spoon. Dice the avocado into bite-sized pieces.

Cut the cherry tomatoes in half lengthwise.
