Ingredients

  • 6 cups dandelion greens
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 0.25 medium red onion
  • 0.5 cup toasted pecans
  • 0.5 cup crumbled goat cheese
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Wash and thoroughly dry the dandelion greens. Trim any tough stems and cut or tear the greens into bite-sized pieces. Place them in a large salad bowl.

Step 2

Halve the cherry tomatoes and add them to the bowl.

Step 3

Slice the cucumber into thin rounds or half-moons, depending on your preference, and add to the salad.

Step 4

Thinly slice the red onion and toss with the greens, tomatoes, and cucumber.

Step 5

In a dry skillet, lightly toast the pecans over medium heat until fragrant, about 2-3 minutes. Add them to the salad bowl.

Step 6

Sprinkle the crumbled goat cheese on top of the salad.

Step 7

In a small mixing bowl, prepare the vinaigrette by whisking together the olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper until emulsified.

Step 8

Drizzle the vinaigrette evenly over the salad and toss gently to combine.

Step 9

Serve immediately and enjoy your fresh dandelion green salad.
