  • 2 tbsp taco seasoning

  • 2 cups shredded Mexican blend cheese
  • 1 cup sour cream
  • 2 stalks green onions, sliced
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 1 tbsp jalapeños, sliced, optional
  • 2 tbsp fresh cilantro, chopped, optional for garnish

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat a large skillet over medium heat and add the olive oil. Once hot, add the ground beef and cook for 6-8 minutes, breaking it apart with a wooden spoon, until browned and cooked through.

Stir in the taco seasoning, water, and a pinch of salt and pepper. Cook for another 2 minutes, then remove from heat.

Drain and rinse the black beans and canned corn. In a small bowl, mix together the black beans, corn, and canned diced tomatoes with green chilies.
