Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 0.5 cup sour cream
  • 2 green onions, chopped
  • 0.25 teaspoons paprika (optional for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

Step 2

Wash the potatoes thoroughly and pat them dry. Pierce each potato a few times with a fork to allow steam to escape during cooking.

Step 3

Rub the potatoes with olive oil and sprinkle them lightly with 0.5 teaspoons of the salt. Place them on the prepared baking sheet.

Step 4

Bake the potatoes in the preheated oven for 45 minutes to 1 hour until the skins are crisp and the insides are fork-tender. Remove and let them cool for 10 minutes, or until they're safe to handle.

Step 5

Slice each potato in half lengthwise. Using a spoon, carefully scoop out the insides, leaving about 1/4-inch of potato flesh attached to the skin. Reserve the scooped flesh for another use, like mashed potatoes.

Step 6

Brush the hollowed-out skins with the remaining olive oil and sprinkle them with the remaining salt and black pepper.

Step 7

Return the skins to the baking sheet, cut side down, and bake for 8 minutes to crisp up. Flip them over and bake another 6-8 minutes, cut side up, until golden and crispy.

Step 8

Remove the skins from the oven and sprinkle the cheddar cheese and crumbled bacon evenly inside each potato skin. Place them back in the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Step 9

Transfer the potato skins to a serving platter. Add a dollop of sour cream to each potato skin, sprinkle with chopped green onions, and garnish with a pinch of paprika if desired.

Step 10

Serve immediately and enjoy the crispy, cheesy, savory goodness of Dancer's Potato Skins!
