  • 1 pound ground beef (or ground turkey for a lighter option)
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano

  • 15 ounces kidney beans, canned (drained and rinsed)
  • 15 ounces black beans, canned (drained and rinsed)
  • 1 cup corn kernels, canned (or frozen)
  • 1 cup beef or vegetable broth
  • 0.25 cup fresh cilantro, chopped (optional, for garnish)
  • 0.25 cup sour cream (optional, for serving)
  • 0.25 cup shredded cheddar cheese (optional, for serving)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat and add olive oil.

Add the diced onion and bell pepper to the pot and sauté for 4-5 minutes, or until softened.

Step 3

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Add the ground beef (or turkey) to the pot and cook, breaking it up with a spoon, until browned and fully cooked. Drain any excess fat if necessary.

Taste the chili and adjust the seasoning if necessary.

Step 9

Serve hot in bowls, garnished with fresh cilantro, sour cream, and shredded cheddar cheese, if desired.
