Ingredients

  • 500 grams Chicken livers
  • 150 grams Unsalted butter
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 teaspoon Fresh thyme
  • 0.5 teaspoons Ground allspice
  • 2 tablespoons Brandy
  • 3 tablespoons Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley (for garnish)
  • 1 loaf/package Baguette or crackers

Directions

Step 1

Clean the chicken livers by removing any connective tissue or fat. Rinse them under cold water and pat dry with paper towels.

Step 2

Dice the onion and mince the garlic cloves.

Step 3

In a large skillet, melt 100 grams of the butter over medium heat until it begins to foam.

Step 4

Add the diced onion and minced garlic to the skillet, cooking for 3-5 minutes, or until softened and fragrant.

Step 5

Add the chicken livers to the skillet and cook for 5-7 minutes, stirring occasionally, until the livers are browned on the outside but slightly pink in the center.

Step 6

Stir in the fresh thyme and ground allspice, cooking for an additional 1 minute to bloom the spices.

Step 7

Add the brandy to the skillet and cook for another 1-2 minutes, allowing the alcohol to evaporate.

Step 8

Transfer the cooked mixture to a food processor or blender. Add the heavy cream, salt, and black pepper.

Blend until the mixture is smooth and creamy. Taste and adjust seasoning if needed.

Spoon the mixture into a serving dish or ramekins, smoothing the surface with the back of a spoon.

Melt the remaining 50 grams of butter and pour it over the surface of the pâté to create a seal. Chill in the refrigerator for at least 2 hours to allow the flavors to meld.

Before serving, garnish with chopped fresh parsley. Serve with slices of baguette or crackers.
