Ingredients

  • 400 grams Dried wheat noodles or Chinese egg noodles
  • 250 grams Ground pork
  • 2 tablespoons Peanut oil
  • 3 cloves Garlic
  • 1 inch piece Ginger
  • 1 teaspoon Sichuan peppercorns
  • 4 tablespoons Chili oil
  • 3 tablespoons Chinese sesame paste or tahini
  • 4 tablespoons Light soy sauce
  • 1 tablespoon Dark soy sauce
  • 2 tablespoons Chinese black vinegar
  • 2 teaspoons Sugar
  • 1 teaspoon Salt
  • 2 stalks Green onions
  • 100 grams Preserved mustard greens
  • 50 grams Roasted peanuts, chopped

Directions

Step 1

Cook the noodles according to the package instructions in a large pot of boiling water. Once cooked, rinse them under cold water and drain well. Set aside.

Step 2

Heat 1 tablespoon of peanut oil in a pan over medium heat. Add the Sichuan peppercorns and stir-fry until fragrant. Remove and discard the peppercorns, leaving the flavored oil in the pan.

Step 3

Add the ground pork to the same pan, using a spoon to break it up. Cook until browned and crispy. Remove the pork and set it aside.

Step 4

In the same pan, add the remaining tablespoon of peanut oil. Sauté the garlic and ginger until fragrant, about 30 seconds.

Step 5

Return the pork to the pan, add the chopped preserved mustard greens, and stir-fry for 2 minutes. Remove from heat.

Step 6

In a small bowl, prepare the sauce by mixing the chili oil, sesame paste or tahini, light soy sauce, dark soy sauce, Chinese black vinegar, sugar, and salt until well combined.

Step 7

In a large serving bowl, combine the cooked noodles, sauce, stirred ground pork mixture, and mix until the noodles are thoroughly coated.

Step 8

Serve the noodles in bowls, garnished with chopped green onions and roasted peanuts. Optionally, drizzle additional chili oil according to taste.
