Ingredients

  • 400 g Fresh wheat noodles
  • 200 g Ground pork
  • 2 tbsp Vegetable oil
  • 1 tsp Sichuan peppercorns
  • 1.5 tbsp Doubanjiang (fermented chili bean paste)
  • 2 tbsp Soy sauce
  • 1 tbsp Chinese black vinegar
  • 2 tbsp Sesame paste (or tahini)
  • 3 tbsp Chili oil
  • 3 cloves Garlic
  • 1 tsp Ginger
  • 1 tsp Sugar
  • 2 stalks Scallions
  • 200 g Bok choy (optional)
  • 100 ml Water or chicken stock

Directions

Step 1

Cook the wheat noodles in boiling water according to package instructions. Drain and set aside.

Step 2

In a small bowl, mix the sesame paste, soy sauce, Chinese black vinegar, chili oil, and sugar. Stir well to combine and set aside.

Step 3

Heat 2 tablespoons of vegetable oil in a skillet over medium heat. Add the Sichuan peppercorns and toast for 1 minute until fragrant. Remove the peppercorns and discard, leaving the infused oil in the skillet.

Step 4

Add minced garlic and ginger to the skillet, sautéing for 30 seconds. Then, add the ground pork and cook until browned.

Step 5

Stir in the Doubanjiang and cook for another 1-2 minutes, ensuring it coats the pork evenly. Add 100 ml of water or chicken stock and simmer until slightly reduced. Set aside.
