Ingredients

  • 2 pounds ground beef
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, diced (seeds removed for less heat)
  • 2 tablespoons tomato paste
  • 28 ounces crushed tomatoes
  • 2 cups beef broth
  • 15 ounces kidney beans (drained and rinsed)
  • 15 ounces black beans (drained and rinsed)
  • 3 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 1 tablespoon smoked paprika
  • 0.5 teaspoons cayenne pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 ounce dark chocolate, finely chopped (optional for depth)
  • 2 tablespoons olive oil
  • 2 green onions, sliced (for garnish)
  • 0.5 cups sour cream (for serving)
  • 1 cup shredded cheddar cheese (for serving)

Directions

Step 1

Heat a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the olive oil and let it warm up.

Step 2

Add the ground beef to the pot and cook, stirring frequently, for 5-7 minutes until browned. Drain excess fat if necessary.

Step 3

Stir in the diced onion, garlic, red bell pepper, and jalapeño. Cook for 5 minutes, or until the vegetables are softened.

Step 4

Add the tomato paste and stir to coat the mixture. Cook for 1-2 minutes until the paste darkens slightly.

Step 5

Pour in the crushed tomatoes, beef broth, kidney beans, and black beans. Stir well to combine.

Step 6

Add the chili powder, ground cumin, smoked paprika, cayenne pepper, oregano, salt, and black pepper. Mix thoroughly.

Step 7

Bring the chili to a gentle boil, then reduce the heat to low. Cover and simmer for 60 minutes, stirring occasionally to prevent sticking.

Step 8

For an extra layer of richness, stir in the finely chopped dark chocolate during the last 10 minutes of cooking. Allow it to melt and blend into the chili.

Step 9

Taste and adjust seasonings if needed (more salt, pepper, or spices).

Step 10

Serve hot in bowls, garnished with sliced green onions, a dollop of sour cream, and a sprinkle of shredded cheddar cheese. Enjoy!
