Ingredients

  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 2 whole Lemon
  • 8 cloves Garlic cloves
  • 1 large Yellow onion
  • 3 tablespoons Olive oil
  • 1 cup Chicken broth
  • 2 tablespoons Butter
  • 6 sprigs Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Paprika

Directions

Step 1

1. Preheat the oven to 375°F (190°C).

Step 2

2. Pat the chicken thighs dry with paper towels and season them on both sides with salt, black pepper, and paprika.

Step 3

3. Thinly slice the onion and set aside. Peel the garlic cloves, leaving them whole.

Step 4

4. Zest one lemon and set the zest aside. Then cut both lemons into thin slices.

Step 5

5. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium heat. Sear the chicken thighs, skin-side down, for 4-5 minutes until golden brown. Flip and cook for another 2 minutes. Remove the chicken from the skillet and set aside.

Step 6

6. In the same skillet, add the remaining 1 tablespoon of olive oil and the butter. Once melted, add the sliced onion and garlic cloves. Cook for 3-4 minutes until the onion starts to soften and turn translucent.

Step 7

7. Add the lemon slices and lemon zest to the skillet, stirring to combine. Cook for an additional 2 minutes to release their aroma.

Step 8

8. Pour in the chicken broth and nestle the seared chicken thighs back into the skillet, skin-side up. Add the fresh thyme sprigs on top.

Step 9

9. Transfer the skillet to the preheated oven and bake for 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Step 10

10. Remove from the oven and let the chicken rest for 5 minutes before serving. Spoon the lemon-onion-garlic sauce over the chicken for added flavor.

Step 11

11. Serve with rice, mashed potatoes, or crusty bread to soak up the delicious sauce. Enjoy!
