Ingredients

  • 2 tablespoons olive oil
  • 12 ounces andouille sausage, sliced
  • 1 pound boneless, skinless chicken thighs, diced
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 14.5 ounces canned crushed tomatoes
  • 3 cups chicken broth
  • 1.5 cups long-grain white rice
  • 1 pound shrimp, peeled and deveined
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 teaspoons Cajun seasoning
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 2 green onions, sliced (optional, for garnish)
  • 0 Tabasco or hot sauce (optional, for serving)

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Step 2

Add the sliced andouille sausage and cook until browned, about 5 minutes. Remove the sausage and set aside.

Step 3

Add the diced chicken thighs to the pot and cook until browned on all sides, about 6-8 minutes. Remove and set aside with the sausage.

Step 4

In the same pot, add the diced onion, green bell pepper, and celery. Sauté until softened, about 5 minutes.

Step 5

Add the minced garlic and cook for 1 minute until fragrant.

Step 6

Stir in the crushed tomatoes and chicken broth, scraping the bottom of the pot to release any browned bits.

Step 7

Add the rice, smoked paprika, thyme, oregano, Cajun seasoning, bay leaf, salt, and black pepper. Stir to combine.

Step 8

Return the sausage and chicken to the pot and bring to a boil.

Step 9

Reduce the heat to low, cover the pot, and simmer for 20 minutes, stirring occasionally to prevent sticking.

Step 10

After 20 minutes, add the shrimp, gently stirring them into the rice mixture. Cook for an additional 5-7 minutes, or until the shrimp are opaque and cooked through.

Step 11

Remove the bay leaf and discard.

Step 12

Taste and adjust seasoning with more salt or Cajun seasoning, if needed.

Step 13

Garnish with chopped parsley and sliced green onions, if desired.

Step 14

Serve hot with Tabasco or your favorite hot sauce on the side.
