Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.
Add the sliced andouille sausage and cook until browned, about 5 minutes. Remove the sausage and set aside.
Add the diced chicken thighs to the pot and cook until browned on all sides, about 6-8 minutes. Remove and set aside with the sausage.
In the same pot, add the diced onion, green bell pepper, and celery. Sauté until softened, about 5 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Stir in the crushed tomatoes and chicken broth, scraping the bottom of the pot to release any browned bits.
