Ingredients

  • 4 whole Roma tomatoes
  • 1 whole jalapeño pepper
  • 0.5 medium red onion
  • 2 whole garlic cloves
  • 0.5 cup, loosely packed cilantro
  • 2 tablespoons fresh lime juice
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground cumin
  • 1 cup canned diced tomatoes (optional for extra juiciness)

Directions

Step 1

Wash the Roma tomatoes, jalapeño pepper, and cilantro thoroughly under cold water.

Step 2

Dice the Roma tomatoes into quarters and place them in a food processor.

Step 3

Remove the stem and seeds from the jalapeño pepper (leave some seeds if you prefer extra spice). Chop it into a few pieces and add to the food processor.

Step 4

Peel the red onion and garlic cloves, then roughly chop them into smaller pieces. Add to the food processor.

Step 5

Add the cilantro, fresh lime juice, salt, and ground cumin to the food processor.

Step 6

If you would like a juicier salsa, add 1 cup of canned diced tomatoes to the food processor.

Step 7

Pulse the food processor 8-10 times or until the salsa reaches your desired consistency (chunky or smooth). Be careful not to over-blend.

Step 8

Taste the salsa and adjust the seasoning by adding more salt or lime juice as needed.

Step 9

Transfer the salsa to a bowl and let it sit for 10 minutes to allow the flavors to meld. Serve immediately or refrigerate for up to 3 days.
