Ingredients

  • 3 cups Cooked chicken breast, shredded
  • 2 cups Enchilada sauce
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 8 pieces Flour tortillas
  • 1 cup Sour cream
  • 1 can (4 ounces) Diced green chilies
  • 2 tablespoons Chopped fresh cilantro
  • 1 tablespoon Olive oil
  • 1 medium Onion, finely diced
  • 2 Garlic cloves, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat the olive oil in a skillet over medium heat. Add the finely diced onion and cook until softened, about 3–4 minutes. Add the minced garlic and cook for another 30 seconds, stirring frequently.

Step 3

In a large mixing bowl, combine the shredded chicken, 1 cup of the enchilada sauce, 1 cup of shredded cheddar cheese, the sour cream, diced green chilies, cooked onion and garlic, salt, and pepper. Mix well.

Step 4

Spread 1/2 cup of the enchilada sauce evenly over the bottom of a 9x13-inch baking dish.

Step 5

Lay a tortilla flat on a clean surface. Spoon 1/2 cup of the chicken mixture down the center of the tortilla. Roll the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.

Step 6

Pour the remaining 1 1/2 cups of enchilada sauce evenly over the rolled tortillas in the baking dish. Sprinkle the remaining cheddar cheese and the Monterey Jack cheese on top.

Step 7

Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbling.

Step 8

Remove from the oven and let cool for 5 minutes. Garnish with freshly chopped cilantro before serving.

Step 9

Serve warm with your favorite toppings such as guacamole, sour cream, or salsa.
