Ingredients

  • 175 grams Unsalted butter
  • 175 grams Granulated sugar
  • 3 large Eggs
  • 200 grams Ground almonds (almond flour)
  • 50 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 1 Zest of a lemon
  • 1 tablespoon Lemon juice
  • 0.25 teaspoon Salt
  • 2 tablespoons Powdered sugar (for dusting, optional)

Directions

Step 1

Preheat the oven to 170°C (340°F) and grease a 20cm (8-inch) round cake pan. Line the bottom with parchment paper to ensure easy removal.

Step 2

In a large bowl, cream together the unsalted butter and granulated sugar using a hand mixer or stand mixer until the mixture is pale and fluffy, about 3-4 minutes.

Step 3

Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Scrape down the sides of the bowl as needed.

Step 4

Fold in the ground almonds gently using a spatula until evenly distributed.

Step 5

In a separate bowl, sift together the all-purpose flour, baking powder, and salt. Gradually fold this dry mixture into the wet almond mixture, taking care not to overmix.

Step 6

Stir in the lemon zest and lemon juice, which will enhance the cake's flavor with citrusy brightness.

Step 7

Pour the batter into the prepared cake pan and smooth the top with the back of a spoon or spatula.

Step 8

Bake the cake in the preheated oven for 35-40 minutes, or until the edges are golden and a toothpick inserted in the center comes out with just a few moist crumbs.

Step 9

Allow the cake to cool in the pan for 10 minutes, then carefully turn it out onto a wire rack to cool completely.

Step 10

Before serving, optionally dust the top of the cake with powdered sugar for a decorative and lightly sweet finish.
