  • 1 teaspoon ground coriander
  • 0.5 teaspoons ground chili powder (optional)
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh cilantro leaves, chopped

Directions

Step 1

Rinse the red lentils thoroughly under cold water until the water runs clear, then drain.

Step 2

In a medium pot, combine the rinsed lentils with 4 cups of water. Bring to a boil, then reduce the heat to low and simmer for 15-20 minutes, skimming off any foam that rises to the surface.

While the lentils are cooking, rinse the rice until the water runs clear. Combine the rice with 2 cups of water in a separate pot. Bring to a boil over medium-high heat, then cover the pot, reduce the heat to low, and simmer for 15 minutes. Remove from heat and let the rice sit, covered, for an additional 5 minutes before fluffing with a fork.

In a large, deep skillet or saucepan, heat the ghee or vegetable oil over medium heat. Add the cumin seeds and let them sizzle for 30 seconds until aromatic.
