Ingredients

  • 12 oz Spam (original or low-sodium)
  • 8 slices Bread (sandwich slices, white or whole wheat)
  • 4 slices Cheddar cheese
  • 4 tbsp Mayonnaise
  • 2 tsp Mustard (optional)
  • 4 leaves Lettuce leaves
  • 1 large Tomato
  • 2 tbsp Butter

Directions

Step 1

Slice the Spam into 8 even slices, approximately 1/4 inch thick.

Step 2

Preheat a non-stick skillet or griddle over medium heat.

Step 3

Add 1 tablespoon of butter to the skillet and allow it to melt.

Step 4

Place the Spam slices in the skillet and cook for 2-3 minutes per side, or until golden brown and slightly crispy. Remove from the heat and set aside.

Step 5

Slice the tomato into thin rounds and wash the lettuce leaves. Pat them dry with a paper towel.

Step 6

Lay out the bread slices in pairs. Spread 1/2 tablespoon of mayonnaise on each slice of bread. If desired, spread 1/4 teaspoon of mustard on half of the slices for extra flavor.

Step 7

Layer one slice of cheddar cheese on top of four of the bread slices, followed by 2 slices of cooked Spam.

Step 8

Top the Spam with a lettuce leaf and a slice or two of tomato. Finish with the remaining bread slices to form sandwiches.

Step 9

Wipe out the skillet and return it to medium heat. Add the remaining 1 tablespoon of butter and let it melt.

Step 10

Place each sandwich in the skillet and cook for 2-3 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.

Step 11

Remove from the skillet and let the sandwiches rest for 1-2 minutes. Cut each sandwich in half, if desired, and serve warm.
