Ingredients

  • 3 cups Unsweetened almond milk
  • 1 cup Full-fat coconut milk
  • 4 large Egg yolks
  • 0.25 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.125 teaspoon Ground cloves (optional)
  • 1 pinch Sea salt
  • 0.25 cup Dark rum or bourbon (optional)

Directions

Step 1

In a medium saucepan, combine the almond milk and coconut milk. Heat the mixture over medium heat until it is warm, but not boiling, about 3-4 minutes.

Step 2

In a medium bowl, whisk the egg yolks and maple syrup together until the mixture is smooth and slightly thickened.

Step 3

Slowly pour about 1/2 cup of the warm milk mixture into the egg yolk mixture, whisking constantly to temper the eggs.

Gradually pour the tempered egg mixture back into the saucepan with the remaining milk, whisking constantly to prevent curdling.

Reduce the heat to low and continue to cook, stirring frequently, for about 8-10 minutes, or until the mixture thickens and coats the back of a spoon. Do not let it boil.
