Ingredients

  • 1 cup Raw cashews
  • 3 tablespoons Nutritional yeast
  • 2 tablespoons Lemon juice
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.5 cup Water
  • 2 tablespoons Tapioca starch (optional, for stretchiness)

Directions

Step 1

Soak the raw cashews in hot water for 10 minutes to soften. Drain and set aside.

Step 2

In a blender or food processor, combine the soaked cashews, nutritional yeast, lemon juice, garlic powder, onion powder, salt, and water.

Step 3

Blend on high speed until the mixture is completely smooth and creamy. Scrape down the sides as needed to ensure even blending.

Step 4

If you are using tapioca starch for a stretchier texture, transfer the blended mixture to a small saucepan.

Step 5

Cook the mixture over medium heat, stirring constantly, for about 3-5 minutes. The mixture will thicken and become stretchy.

Step 6

Remove from heat and allow the cheese to cool slightly before serving. Use it as a spread, dip, or sauce for pasta, or refrigerate to let it firm up more for slicing.

Step 7

Store leftovers in an airtight container in the refrigerator for up to 5 days.
