Ingredients

  • 2 cups All-purpose flour

  • 1 teaspoon Ground cinnamon
  • 1.5 cups Rolled oats
  • 0.75 cup Brown sugar (packed)
  • 0.25 cup Granulated sugar
  • 0.5 cup Unsweetened applesauce
  • 0.5 cup Coconut oil (melted)
  • 1 teaspoon Vanilla extract
  • 0.5 cup Dried cranberries
  • 0.5 cup Raisins
  • 0.5 cup Chopped dried apricots

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon until well combined.

Stir the rolled oats into the dry mixture and set aside.

Step 4

In a large mixing bowl, combine the brown sugar, granulated sugar, unsweetened applesauce, melted coconut oil, and vanilla extract. Mix until smooth and creamy.
