Ingredients

  • 2 medium-sized zucchini
  • 1 medium-sized carrot
  • 1 small brown onion
  • 2 cloves garlic cloves
  • 5 large egg
  • 1 cup plain flour (gluten-free if preferred)
  • 1 teaspoon baking powder
  • 0.25 cup olive oil
  • 8 halved cherry tomatoes
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley (optional for garnish)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a rectangular baking dish (approximately 8x12 inches) with parchment paper.

Step 2

Grate the zucchini and carrot. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. Set aside.

Step 3

Finely dice the onion and mince the garlic cloves.

Step 4

In a large mixing bowl, add the squeezed zucchini, grated carrot, diced onion, minced garlic, and halved cherry tomatoes.

Step 5

In a separate bowl, whisk the eggs until combined. Add the olive oil, salt, and black pepper. Mix well.

Step 6

Add the plain flour and baking powder to the wet mixture, stirring until smooth.

Step 7

Pour the wet mixture into the bowl with the vegetables. Gently fold to combine all ingredients evenly.

Step 8

Transfer the mixture into the prepared baking dish, spreading it out evenly.

Step 9

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a skewer inserted into the center comes out clean.

Step 10

Remove from the oven and allow the slice to cool in the pan for 10 minutes before lifting it out using the parchment paper.

Step 11

Slice into squares or rectangles and garnish with chopped fresh parsley, if desired. Serve warm or at room temperature.
