Ingredients

  • 2 medium Zucchini
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion
  • 2 cloves Garlic
  • 14 ounces Firm tofu
  • 0.5 cup Unsweetened almond milk
  • 3 tablespoons Nutritional yeast
  • 1 tablespoon Cornstarch
  • 0.5 teaspoon Turmeric
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 1 9-inch Unbaked pie crust (dairy-free)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash and thinly slice the zucchini. Peel and finely chop the onion. Mince the garlic.

Step 3

Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, cooking until softened, about 3-5 minutes.

Add the sliced zucchini to the skillet and sauté for another 5-7 minutes until just tender. Set aside to cool slightly.

Crumble the tofu into a blender or food processor. Add the almond milk, nutritional yeast, cornstarch, turmeric, salt, and pepper. Blend until smooth and creamy.
