Directions

Step 1

Grate the zucchini using a box grater and place it in a bowl. Sprinkle the zucchini with 1 teaspoon of salt and let it sit for 10 minutes. This will draw out excess moisture.

While the zucchini rests, prepare the flaxseed 'egg' by mixing 2 tablespoons of ground flaxseed with 5 tablespoons of water in a small bowl. Let it sit for 5-10 minutes until the mixture thickens.
