Ingredients

  • 3 whole Fresh lemons
  • 1 cup Coconut milk (unsweetened, full-fat)
  • 0.5 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Lemon zest
  • 0.5 cup Water

Directions

Step 1

Roll the lemons on a countertop to help release the juices, then slice them in half and juice them into a measuring cup. You’ll need 1/2 cup of fresh lemon juice, which is approximately the juice of 3 medium lemons.

Step 2

Zest one of the lemons to get about 1 tablespoon of lemon zest. Set aside.

Step 3

In a mixing bowl, whisk together the lemon juice, lemon zest, coconut milk, maple syrup, vanilla extract, and water until smooth and fully combined.

Taste the mixture and adjust sweetness by adding a little more maple syrup, if desired.

Step 5

Carefully pour the mixture into popsicle molds, leaving a small amount of space at the top to allow for expansion when freezing.

Step 6

Insert popsicle sticks into the molds. If the sticks don’t stay centered, cover the molds with foil and poke the sticks through the foil to secure them in place.

Step 7

Place the molds in the freezer and freeze for at least 6 hours, or until the popsicles are fully set.

Step 8

To release the popsicles from the molds, run the molds under warm water for 10–15 seconds to loosen them, then gently remove the popsicles.

Step 9

Serve immediately or store in an airtight container in the freezer for up to 2 weeks.
