In a large mixing bowl, combine the all-purpose flour, instant yeast, sugar, and salt. Mix well to evenly distribute the ingredients.
Slowly add the warm water and olive oil to the dry ingredients while mixing with a wooden spoon. Once the dough starts to come together, transfer it to a lightly floured surface.
Knead the dough for about 8–10 minutes until it becomes smooth and elastic. If the dough is sticky, add a little more flour, one tablespoon at a time.
Place the kneaded dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1 hour or until it doubles in size.
Punch down the dough to release any air bubbles. Divide the dough into six equal portions and shape each portion into a ball. Cover the dough balls with a towel and let them rest for 15 minutes.
On a lightly floured surface, roll out each dough ball into a round or oval shape, approximately 1/4 inch thick.
Heat a large, dry skillet or griddle over medium-high heat. Place one rolled-out dough round onto the hot skillet and cook for 1–2 minutes, or until bubbles start to form on the surface.
Flip the laffa and cook the other side for another 1–2 minutes, or until golden brown spots appear. Repeat with the remaining dough rounds.
While the laffas are still warm, brush them lightly with olive oil and sprinkle za'atar seasoning on top. Use the back of a spoon to gently press the seasoning into the bread.
Serve immediately as a wrap, alongside dips, or as part of a meal. Store any leftover laffas in an airtight container for up to 2 days or freeze for longer storage.
