Ingredients

  • 3 cups All-purpose flour
  • 2.25 teaspoons Active dry yeast
  • 1.25 cups Warm water (110°F/45°C)
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 3 tablespoons Olive oil (plus extra for brushing)
  • 3 tablespoons Za'atar spice blend
  • 1 tablespoon Sesame seeds (optional, for garnish)

Directions

Step 1

In a small bowl, combine the active dry yeast, sugar, and warm water. Stir gently and allow it to sit for 5-10 minutes until it becomes frothy.

Step 2

In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and 2 tablespoons of olive oil.

Step 3

Mix the ingredients together until a dough forms. Transfer to a floured surface and knead for 8-10 minutes until the dough is smooth and elastic.

Step 4

Lightly oil a clean bowl with 1 tablespoon of olive oil. Place the dough in the bowl, cover it with a damp kitchen towel, and let it rise in a warm spot for 1 hour or until doubled in size.

Step 5

Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper.

Step 6

Divide the dough into 8 equal pieces. Roll each piece into a ball, then flatten into a circle about 1/4 inch thick.

Step 7

Place the flattened dough onto the prepared baking sheets. Brush the tops generously with olive oil.

Step 8

Sprinkle 1/2 to 1 teaspoon of za'atar spice blend evenly over each piece of dough. Add sesame seeds as a garnish if desired.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the bread is cooked through.

Step 10

Remove from the oven and allow to cool slightly. Serve warm as a side dish or enjoy dipped in olive oil.
