Ingredients

  • 2 cups Full-fat coconut milk (from a can)
  • 1 cup Unsweetened almond milk
  • 1 teaspoon Agar agar powder
  • 1 tablespoon Maple syrup or agave syrup
  • 1 teaspoon Probiotic powder (dairy-free)
  • 1.5 tablespoons Za'atar seasoning
  • 1 teaspoon Olive oil
  • 0.25 teaspoon Salt
  • 1 teaspoon Fresh mint (optional, for garnish)

Directions

Step 1

In a medium saucepan, combine the full-fat coconut milk and unsweetened almond milk. Whisk well to ensure a smooth mixture.

Step 2

Sprinkle the agar agar powder over the milk mixture and whisk to combine. Let it sit for 5 minutes to allow the agar agar to hydrate.

Step 3

Place the saucepan over medium heat and bring the mixture to a gentle simmer, whisking constantly to dissolve the agar agar thoroughly. Simmer for 3-5 minutes until slightly thickened.

Step 4

Remove the saucepan from the heat and allow the mixture to cool to about 110°F (43°C), warm to the touch but not hot. Stir in the maple syrup and probiotic powder.

Step 5

Transfer the mixture into sterilized glass jars or a clean container. Cover with a lid or plastic wrap and let the yogurt ferment at room temperature (about 75°F or 24°C) for 12-24 hours, depending on your desired tanginess.

Step 6

After fermentation, whisk the yogurt to ensure a smooth texture. Transfer it to the fridge to chill for at least 2 hours, allowing it to thicken further.

Step 7

To serve, spoon the chilled yogurt into bowls. Drizzle with olive oil and sprinkle za'atar seasoning evenly over the top. Add a pinch of salt to enhance the flavors.

Step 8

Garnish with fresh mint leaves if desired. Serve immediately and enjoy!
