Ingredients

  • 300 g Carrot
  • 100 g Chickpea flour (gram flour)
  • 180 ml Water
  • 2 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 100 g Mixed greens
  • 150 g Cherry tomatoes
  • 1 small Cucumber
  • 1 medium Avocado
  • 1 tbsp Lemon juice
  • 2 tbsp Tahini
  • 0.5 tsp Garlic powder

Directions

Step 1

Peel and finely grate the carrots. Place them in a large mixing bowl.

Step 2

Add the chickpea flour, water, olive oil, salt, and black pepper to the bowl. Mix until the ingredients form a smooth batter.

Step 3

Heat a non-stick frying pan over medium heat. Lightly grease it with a small amount of olive oil.

Step 4

Pour a ladleful of the carrot batter into the pan and spread it out evenly to form a thin wrap. Cook for 2-3 minutes on one side, then gently flip and cook for another 2-3 minutes until golden and firm. Repeat with the remaining batter to make 3-4 wraps.

While the wraps cool slightly, prepare the filling by slicing the cherry tomatoes, cucumber, and avocado into thin pieces.

Step 6

In a small bowl, mix the tahini, lemon juice, garlic powder, and 1 tablespoon of water to create a smooth sauce. Adjust the consistency by adding more water if needed.

Step 7

Lay a carrot wrap on a flat surface. Add a handful of mixed greens, sliced tomatoes, cucumber, and avocado in the center. Drizzle with the tahini sauce.

Step 8

Fold the sides of the wrap inward, then roll it up tightly like a burrito. Repeat with the remaining wraps and filling.

Serve immediately or wrap in parchment paper for an on-the-go meal.
