Ingredients

  • 1 cup Toor dal (split pigeon peas)
  • 3 cups Water
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 2 cups Cooked rice
  • 1 tablespoon Coconut oil
  • 0.5 teaspoon Cumin seeds
  • 1 unit Green chili (slit)
  • 1 pinch Asafoetida (hing)
  • 6 leaves Curry leaves
  • 2 tablespoons Chopped coriander leaves (cilantro, for garnish)
  • 1 unit Fresh lime or lemon (for serving)

Directions

Step 1

Wash the toor dal thoroughly under running water until the water runs clear, then soak it for 15 minutes (optional but recommended for faster cooking).

Step 2

In a pressure cooker or a large pot, add the soaked dal, 3 cups of water, and turmeric powder. Cook for 3-4 whistles in a pressure cooker or about 20-25 minutes in a pot, until the dal is soft and mushy.

Step 3

Once cooked, mash the dal with a ladle or a whisk for a smooth consistency.

Step 4

Place a pan over medium heat and add coconut oil. Once the oil is hot, add cumin seeds and let them sizzle for a few seconds.

Step 5

Add the green chili, asafoetida, and curry leaves, stirring for about 30 seconds until fragrant.

Step 6

Pour the tempered spices into the cooked dal and mix well. Season with salt and stir to combine. Simmer the dal on low heat for 5 minutes to allow the flavors to meld.

Step 7

Serve the warm Varan with cooked rice (Bhat), garnish with chopped coriander leaves, and squeeze fresh lime or lemon juice over the top for added flavor.
