Ingredients

  • 0.5 cup Raw rice
  • 2 cups Coconut milk
  • 2 cups Water
  • 0.75 cup Jaggery (grated or powdered)
  • 4 pods Cardamom pods (crushed or powdered)
  • 2 tablespoons Cashews
  • 1 tablespoon Raisins
  • 1 tablespoon Coconut oil
  • 1 pinch Salt

Directions

Step 1

Rinse the raw rice thoroughly under running water until the water runs clear to remove excess starch.

Step 2

In a medium-sized pot, add the rinsed rice, 2 cups of water, and a pinch of salt. Cook on medium heat until the rice is soft and fully cooked, stirring occasionally to avoid sticking.

Step 3

Once the rice is cooked, reduce the heat to low and add the coconut milk. Stir gently to combine and let it simmer for 5-7 minutes to absorb the coconut milk's flavor.

Step 4

In a separate pan, heat the coconut oil over low heat. Add the cashews and fry until golden brown. Add the raisins and fry until they puff up. Remove from heat and set aside.

In a small saucepan, add the grated or powdered jaggery along with 1/4 cup of water. Heat on low until the jaggery dissolves to form a syrup. Strain the syrup to remove any impurities.
