Ingredients

  • 500 g All-purpose flour
  • 250 ml Water
  • 1 tsp Salt (for dough)
  • 500 g Ground lamb or beef
  • 2 large Onion, finely minced
  • 2 tsp Salt (for filling)
  • 1 tsp Black pepper
  • 1 tsp Cumin, ground
  • 2 tbsp Neutral oil (sunflower or avocado)

Directions

Step 1

In a large mixing bowl, combine the flour and salt for the dough. Gradually add water while stirring until a rough dough forms.

Step 2

Knead the dough on a lightly floured surface for 8-10 minutes until smooth and elastic. Cover with plastic wrap or a damp cloth and let it rest for 30 minutes.

Step 3

In another bowl, prepare the filling by combining the ground meat, minced onions, salt, black pepper, cumin, and oil. Mix well until evenly combined.

Step 4

After the dough has rested, divide it into 4 equal portions. Roll one portion into a thin sheet (about 1-2 mm thick). Keep the remaining dough covered to prevent drying.

Using a round cutter or an inverted glass (approximately 10 cm in diameter), cut out circles from the dough.

Place about 1.5 tablespoons of the meat filling in the center of each circle. Fold the edges of the dough over the filling, pinching them together at the top to form a sealed pleated pouch.

Repeat the rolling, cutting, and filling process with the remaining dough and filling.
